Sometimes you just need a chip. Right? The Sprout Café’s Kale Chips can satisfy your craving for a delicious crunchy snack, while actually being good for you!

The Sprout Café’s Kale Chips begin with organic kale sourced locally from Joseph Fields Farm. This is important because we like to support local businesses, organic farmers and because when you eat locally sourced produce, you can reduce seasonal allergy symptoms.

We then add our specially formulated seasonings to the kale and then dehydrate it, which removes the water and makes it crunchy, all the while preserving the enzymes and, vitamins and minerals.

A four-course meal was served, including: organic asparagus soup with fresh cream and crumbled portobello bacon; a sprouted barley salad with braised Brussels sprouts and heirloom cherry tomatoes; a Vietnamese crepe with sprouts, jalapeno seared tofu and a sweet and spicy dipping sauce; and a vegan filet with roasted potatoes, fresh organic bell peppers, haricot verts, with an au jus and a balsamic reduction sauce.

Through years of subliminal (and direct) billion dollar advertising campaigns, the dairy industry has most of us convinced and telling our children, “Drink milk!  It will give you strong bones!”

“Not only do we barely absorb the calcium in cow’s milk (especially if pasteurized), but to make matters worse, it actually increases calcium loss from the bones.   Like all animal protein, milk acidifies the body pH which in turn triggers a biological correction. You see, calcium is an excellent acid neutralizer and the biggest storage of calcium in the body is – you guessed it… in the bones. So the very same calcium that our bones need to stay strong is utilized to neutralize the acidifying effect of milk.”  (http://saveourbones.com)  Around the world, countries consuming the most milk and dairy have the highest rates of bone fractures and osteoporosis.

Fortunately, there are many sources of calcium available within the vegan diet that can be absorbed efficiently into the body, such as (but certainly not limited to!):

Try out these delicious kale chips for a healthy, wholesome alternative to most “snack” food!

Cheesy Kale Chips

Serves 2 to 4 as a snack

3/4 cup cashews
1 bunch kale, washed and dried
1/2 red bell pepper, stem and seeds removed, chopped into large pieces
1 clove garlic, peeled
1 tablespoon soy sauce
2 tablespoons vegetable oil
1/3 cup nutritional yeast (not to be confused with Brewer’s yeast)
1 lemon, peeled, cut into wedges, and de-seeded as much as possible (a few stragglers are ok)

Cover the cashews with water in a small bowl and let the soak for at least one hour before proceeding.

Preheat oven to the lowest heat setting (mine is 180 degrees). Line several baking sheets with parchment paper. Drain cashews and set aside. Trim stems the from each kale leaf and cut each leaf into chip-size pieces.

Add the cashews, red pepper, garlic, soy sauce, oil, and nutritional yeast to a food processor. Scoop the flesh from the lemon and add this to the food processor as well. Blend until smooth. (Alternatively, you can use just the lemon juice for a slightly less bright lemon flavor.)

In a large bowl, combine kale and cashew paste, making sure kale is evenly coated. Place kale pieces on baking sheets allowing space between each piece so they do not touch or overlap. This will take more than one batch, so reserve any remaining kale and refrigerate, covered, until first batch has finished baking.

Bake kale until crisp and completely dry, between 2 and 4 hours. Check after the first hour and turn leaves over. Check kale periodically. Chips will be ready when crunchy and stiff and topping doesn’t feel chewy or moist.

Kale chips will keep in an air tight container for one week.
